The fruits of this cranberry ripen rather late in the year. By happy coincidence, they are usually ready for harvesting around the Canadian Thanksgiving holiday, just in time to a superb sauce for turkey. They are too tart to eat raw, although they become sweeter after being exposed to frost. The are quite high in vitamin C and very flavorful after being sweetened with sugar or honey.
